We call the weather forecast everyday and...pray. Optimum sugar levels brown stems and no bitter pips are the very true signals for the beginning of picking. The grapes are only handpicked in the morning (to avoid the afternoon beating heat), and put into small crates directly to the winery. We insist on picking at full maturity, thus the harvest can last up to 4 weeks.
